Gabay's Black Rice Wine (tapuy) is made from a highland rice that is commonly known as Balatinao by the locals of Sagada, Mt. Province. This kind of rice is glutinous and is ideal in making the traditional and sought after drink of the Cordilleras.
Fermented for 30 days using the traditional process, and was secondarily fermented for another 30 days using the modern process, this captures the flavor and aroma of the special rice used. It is best served warm as a table wine or can be used for special occasions.
